Chock Full of Yummy. Veggie Meal in a Flash!

Healthy eating doesn't have to be complicated. I made the most delicious meal yesterday, I wanted to share it. Sorry there's no picture! I couldn't resist just digging in.

Portion: 1 large serving or 2 small

 

Ingredients:

1 ripe avocado, removed from skin and cut in 1/2 inch cubes

1/2 - 3/4 can of chickpeas, rinsed

1 whole lemon, cut in half

4 cups of brussel sprouts, washed, trimmed and cut in half

1/4 cup sunflower seeds, raw or roasted with light salt

salt & pepper to taste

red pepper flake to taste

olive oil

 

Directions:

Blanch the brussel sprouts in boiling water for 2 minutes. Drain

Drizzle olive oil in a pan. Heat oil to medium high but don't let the oil start to smoke.

Sprinkle red pepper flakes (to taste) into the oil and let sit 1 minute.

Toss the blanched brussel sprouts into the hot pan and let them sit for 2 minutes before stirring, allowing themm to brown. Sprinkle with salt and pepper. After 4-5 minutes in the pan, remove the sprouts, placing them in a bowl or on a serving plate. Let them cool for a couple minutes, then add all the remaining ingredients. Squeeze the lemon over everything at the end.

If you're vegetarian, eat this as your main dish. Have berries for dessert.

If you're a meat-eater, eat this as a side dish to fish, chicken or grass-fed beef.
